For the Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped

For the Vinaigrette

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste


Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 400°F (200°C). Grease a baking dish with 1 tablespoon of olive oil to prevent sticking and add flavor.
  2. Season Chicken: Season the chicken breasts with salt and pepper evenly on both sides, then place them in the prepared baking dish.
  3. Prepare Feta Topping: In a small bowl, combine the crumbled feta cheese, panko breadcrumbs, chopped parsley, and chopped oregano. Mix well and sprinkle this mixture evenly over the top of each chicken breast.
  4. Bake Chicken: Place the baking dish in the oven and bake for 25–30 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the feta topping is golden and crispy.
  5. Make Vinaigrette: While the chicken is baking, prepare the vinaigrette by whisking together 2 tablespoons of olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper in a small bowl until smooth and emulsified.
  6. Finish and Serve: Once the chicken is done, remove it from the oven and immediately drizzle the vinaigrette over the top. Serve the chicken with your favorite side dishes and enjoy!

Notes

  • For extra crispiness, broil the chicken for the last 2–3 minutes watching carefully to avoid burning.
  • Feel free to swap the fresh herbs with dried oregano and parsley if fresh is unavailable, using about one-third of the amount.
