Ingredients
Scale
Shrimp and Stuffing
- 1 1/2 pounds large shrimp, peeled and deveined with tails on
- 1 cup seasoned breadcrumbs
- 1/2 cup crabmeat (lump or claw, picked over for shells)
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 2 tablespoons finely chopped celery
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 cup melted butter
- juice of 1 lemon
- 1/2 teaspoon paprika
- salt and pepper to taste
For Baking
- 2 tablespoons olive oil
- nonstick spray or additional butter for greasing the baking dish
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly grease a medium baking dish with nonstick spray or butter to prevent sticking.
- Make the Stuffing: In a mixing bowl, combine the seasoned breadcrumbs, crabmeat, grated Parmesan, finely chopped onion, celery, parsley, minced garlic, melted butter, lemon juice, paprika, salt, and pepper. Mix well until the ingredients are evenly distributed and the mixture is slightly moist.
- Arrange the Shrimp: Place the peeled and deveined shrimp in the prepared baking dish, arranging them curled with tails up against the sides of the dish if possible for an attractive presentation.
- Stuff the Shrimp: Generously spoon the breadcrumb and crab stuffing mixture over and around the shrimp, lightly pressing it down to adhere well.
- Add Olive Oil: Drizzle the olive oil evenly over the stuffed shrimp to enhance browning and flavor during baking.
- Bake: Place the baking dish in the preheated oven and bake for 20–25 minutes until the shrimp turn pink, are opaque throughout, and the stuffing turns golden brown on top.
- Serve: Remove from oven and serve the casserole hot, accompanied by lemon wedges or over a bed of rice for a full meal.
Notes
- For extra crunch, use panko breadcrumbs instead of regular seasoned breadcrumbs.
- Adding a splash of white wine to the baking dish before baking adds a depth of flavor.
- If using frozen shrimp, thaw completely and pat dry thoroughly to avoid excess moisture diluting the stuffing.
