Description

This Biscuits and Gravy Breakfast Casserole is a hearty, comforting morning dish combining fluffy biscuits, savory sausage gravy, and baked eggs. Perfect for a family brunch or weekend breakfast, it bakes all the classic Southern flavors together into one easy casserole that’s warm, cheesy, and satisfying.

Ingredients

Scale

Biscuits

  • 1 can (16.3 oz) refrigerated biscuit dough

Sausage Gravy

  • 1 lb breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/4 tsp black pepper (or to taste)

Egg Mixture

  • 6 large eggs
  • 1/4 cup shredded cheddar cheese (optional)

Garnish

  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Prepare Biscuit Layer: Cut the biscuit dough into quarters and evenly spread half of the pieces in the bottom of the prepared baking dish.
  3. Cook Sausage: In a skillet over medium heat, cook the breakfast sausage for 6 to 8 minutes until it is browned and fully cooked. Drain any excess fat from the pan.
  4. Make Sausage Gravy: Sprinkle the flour over the cooked sausage and stir to combine. Gradually add the whole milk, stirring continuously until the gravy thickens. Season with black pepper to taste.
  5. Layer Gravy: Pour half of the sausage gravy evenly over the biscuit dough in the baking dish.
  6. Add Egg Mixture: In a bowl, whisk together the eggs until smooth. Pour the eggs evenly over the gravy layer in the dish.
  7. Top with Remaining Biscuit Dough and Gravy: Arrange the remaining biscuit pieces over the egg layer, then pour the remaining sausage gravy over the top. Sprinkle shredded cheddar cheese on top if using.
  8. Bake the Casserole: Bake in the preheated oven for 30 to 35 minutes until the biscuits are golden brown and the casserole is set.
  9. Rest and Garnish: Let the casserole rest for 5 minutes to allow it to set. Garnish with chopped fresh parsley if desired, then serve warm.

Notes

  • You can substitute whole milk for 2% or low-fat milk for a lighter version.
  • Add a pinch of cayenne pepper to the sausage gravy for a spicy kick.
  • Cheddar cheese is optional but adds a nice richness; feel free to use other cheeses like pepper jack or mozzarella.
  • This casserole can be prepared the night before and baked in the morning for convenience.
  • Make sure to drain the sausage fat well to avoid greasy gravy.
