Blackberry Balsamic Jam

Grilled Cheese Sandwich
- 300 g double cream brie cheese
- 1 tbsp chopped fresh thyme
- 8 slices sourdough bread

- Make the Blackberry Balsamic Jam: In a medium saucepan, combine 2 cups of blackberries, 3 tablespoons of balsamic vinegar, 6 tablespoons of sugar, 2 tablespoons of lemon juice, and a pinch of kosher salt. Place over medium heat and simmer gently, stirring occasionally, until the mixture thickens to a jam-like consistency, about 15 minutes. Remove from heat and let it cool slightly.
- Slice the Brie Cheese and Prep Bread: While the jam simmers, slice 300 grams of double cream brie cheese into even pieces for easy melting. Chop 1 tablespoon of fresh thyme and set aside. Butter one side of each of the 8 sourdough bread slices.
- Fry Bread with Brie and Thyme: Heat a skillet over medium heat. Place 4 slices of bread, buttered side down, onto the skillet. Top each with sliced brie and sprinkle with chopped thyme. Cook until the bread is golden and the cheese begins to melt, about 3-4 minutes.
- Assemble the Sandwiches: Spread a generous layer of the blackberry balsamic jam on the unbuttered sides of the remaining 4 bread slices. Place these jam-covered slices on top of the melted brie slices in the skillet, buttered side facing up, to complete the sandwiches.
