Ingredients
Scale
Cookie Batter
- 1 box (15.25 ounces) yellow cake mix
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
Cream Filling
- 1 cup powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Chocolate Topping
- 1 cup chocolate chips
- 1 tablespoon vegetable oil
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookie bites.
- Prepare batter: In a large bowl, combine the yellow cake mix, melted butter, eggs, and milk. Mix thoroughly until the batter is smooth and consistent.
- Bake: Grease a mini muffin tin and scoop the batter into each cup, filling about two-thirds full. Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Let the cookie bites cool in the tin for a few minutes before transferring them onto a wire rack to cool completely.
- Make cream filling: In a separate bowl, whisk together the powdered sugar, heavy cream, and vanilla extract until the mixture becomes smooth and creamy, forming the vanilla cream filling.
- Assemble: Once the cookie bites have fully cooled, carefully cut a small hole in the top of each cookie bite using a small knife. Fill each hole with the prepared cream filling.
- Melt chocolate: Place the chocolate chips and vegetable oil in a microwave-safe bowl. Melt them in 30-second intervals, stirring well after each interval until the chocolate is fully melted and smooth.
- Drizzle chocolate: Drizzle the melted chocolate over each filled cookie bite to finish. Allow the chocolate to set before serving.
Notes
- Make sure the cookie bites are completely cool before filling to prevent melting the cream filling.
- You can substitute heavy cream with half-and-half for a lighter cream filling.
- Use a piping bag or small spoon to fill the cookie bites neatly.
- Store cookie bites in an airtight container in the refrigerator for up to 3 days.
- For a glossy chocolate topping, adding vegetable oil helps achieve a smooth finish.
