Instructions

  1. Cook the orzo: Prepare the orzo pasta following the package instructions. Once cooked, drain the orzo and set it aside for later use.
  2. Cook the chicken: Heat olive oil in a skillet over medium heat. Season both sides of the chicken breasts with salt and pepper. Place the chicken in the skillet and cook for approximately 6-7 minutes per side until the chicken is golden brown on the outside and cooked through. Remove the chicken from the skillet and slice into strips.
  3. Make the Boursin sauce: In the same skillet, pour in the chicken broth and add the Boursin cheese. Stir the mixture over medium heat until the cheese melts completely and the sauce becomes smooth and creamy.
  4. Combine orzo and spinach: Add the cooked orzo and chopped spinach to the skillet with the sauce. Stir gently and cook until the spinach has wilted and everything is well combined.
