Ingredients
Scale
Peppers
- 4 large bell peppers (any color), halved and seeded
Filling
- 2 cups cooked shredded chicken breast
- 1 cup cooked white or brown rice
- 1 cup shredded cheddar cheese
- 1/2 cup salsa or diced tomatoes
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Topping and Other
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon olive oil
Instructions
- Preheat Oven and Prepare Peppers: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil, then arrange the halved and seeded bell peppers cut side up in the dish.
- Mix the Filling: In a large bowl, combine the cooked shredded chicken, cooked rice, salsa or diced tomatoes, shredded cheddar cheese, chopped green onions, garlic powder, ground cumin, chili powder, salt, and pepper. Mix thoroughly until well combined.
- Stuff the Peppers: Spoon the prepared filling evenly into each bell pepper half, pressing down gently to pack the mixture firmly.
- Add Mozzarella Topping: Sprinkle shredded mozzarella cheese evenly over the tops of the stuffed peppers.
- Bake Covered: Cover the baking dish loosely with foil and bake for 30 minutes to allow the flavors to meld and peppers to soften.
- Bake Uncovered: Remove the foil and continue baking for an additional 10–15 minutes, until the mozzarella is bubbly and slightly golden and the peppers are tender.
- Rest and Serve: Allow the stuffed peppers to cool for about 5 minutes before serving to enhance flavor and texture.
Notes
- Use rotisserie chicken for a quicker preparation time.
- Substitute rice with quinoa or cauliflower rice for a low-carb alternative.
- Add black beans or corn into the filling mixture for added flavor and texture.
