Ingredients
Scale
Potatoes
- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1 packet ranch seasoning mix
Sausage
- 1 pound smoked sausage
Toppings
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon fresh parsley (optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes.
- Wash and Cut Potatoes: Wash the baby potatoes thoroughly, then cut them into bite-sized pieces ensuring uniform size for even cooking.
- Season Potatoes: Place the cut potatoes into a large bowl, drizzle with olive oil, and toss with garlic powder, onion powder, black pepper, and ranch seasoning mix until evenly coated.
- Roast Potatoes: Spread the seasoned potatoes in a single layer on a baking sheet and bake for 25-30 minutes, stirring halfway through until tender and golden brown.
- Slice Sausage: While potatoes are baking, slice the smoked sausage into 1/2-inch thick rounds.
- Cook Sausage: Heat a skillet over medium heat and cook the sausage slices for 5-7 minutes, turning occasionally, until browned and crispy on the edges. Remove from heat and set aside.
- Combine Sausage and Potatoes: When potatoes are done, remove from oven and gently toss with the cooked smoked sausage.
- Add Cheese: Sprinkle shredded cheddar cheese evenly over the potato and sausage mixture, and return the baking sheet to the oven for an additional 5-7 minutes until cheese is melted and bubbly.
- Finish and Serve: Remove from oven, drizzle sour cream over the top, and garnish with fresh parsley if desired. Serve warm and enjoy!

- Adjust ranch seasoning according to taste or substitute with homemade ranch seasoning.
- Baby potatoes can be replaced with fingerling or small red potatoes.
- Leftovers can be refrigerated for up to 3 days; reheat in oven for best texture.
