Ingredients
Scale
Chicken and Rice
- 2 boneless, skinless chicken breasts, sliced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 cups cooked rice (white, brown, or jasmine)
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded carrots
- 1/4 cup chopped fresh parsley or cilantro
Creamy Garlic Sauce
- 1/2 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Prepare the chicken: In a bowl, combine the sliced chicken with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Toss thoroughly to coat all pieces evenly.
- Cook the chicken: Heat a skillet over medium heat. Add the seasoned chicken slices and cook for 6 to 8 minutes, turning occasionally, until the pieces are browned and cooked through with no pink inside.
- Make the creamy garlic sauce: While the chicken is cooking, whisk together plain Greek yogurt, mayonnaise, lemon juice, minced garlic, olive oil, salt, and pepper in a small bowl until smooth and well combined.
- Assemble the bowls: Divide the cooked rice evenly among four bowls. Top each bowl with cooked chicken slices, chopped cucumber, halved cherry tomatoes, shredded carrots, and fresh parsley or cilantro.
- Serve with sauce: Drizzle each bowl generously with the creamy garlic sauce just before serving for a fresh, tangy finish.
Notes
- You can swap the vegetables for bell peppers, avocado, or red onion depending on what’s available or preferred.
- For a dairy-free alternative, substitute the Greek yogurt and mayonnaise with plant-based versions.
