Ingredients
Scale
Base
- 1/2 cup melted butter
- 4 cups cooked chicken (rotisserie chicken is convenient)
- 1 (14-ounce) bag frozen mixed vegetables
Biscuit Topping
- 1 (11.4-ounce) box Cheddar Bay Biscuit mix
- 2 cups milk
Creamy Sauce
- 1 cup chicken broth
- 1 (10.5-ounce) can cream of chicken soup
Optional Seasonings
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Optional Cheese Layer
- 1 1/2 cups grated cheddar cheese
Instructions
- Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the cobbler.
- Prepare baking dish: Pour the melted butter into the bottom of a 9×13 inch baking dish to create a rich base layer for the cobbler.
- Layer ingredients: Spread the cooked chicken evenly over the melted butter, then layer the frozen mixed vegetables on top to form the hearty filling.
- Make biscuit mixture: In a large bowl, whisk together the Cheddar Bay Biscuit mix along with its seasoning packet and the milk until mostly smooth, allowing for some small lumps.
- Add creamy sauce: Pour the biscuit mixture evenly over the vegetables in the baking dish. Then, using the same bowl, whisk together the chicken broth and cream of chicken soup and pour this mixture over the biscuit layer to add moisture and flavor.
- Bake: Bake the cobbler in the preheated oven for 1 hour, or until the biscuit topping is golden brown and the center is almost set but still slightly loose to keep a creamy gravy texture.
- Serve: Let the dish cool for 10-15 minutes before serving to allow it to set and enhance the flavors.
Notes
- Using rotisserie chicken saves time and adds great flavor.
- The biscuit topping may have some lumps; this is normal and will bake into a delicious crust.
- Do not overbake to preserve the gravy-like texture in the middle.
- Optionally, sprinkle grated cheddar cheese over the biscuit layer before baking for an extra cheesy topping.
- Let the cobbler cool before serving to avoid burning and to allow it to firm up.
