Ingredients
Scale
Chicken and Seasoning
- 1 pound boneless, skinless chicken breasts or thighs, cut into strips
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Noodles and Sauce
- 12 ounces egg noodles
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter (divided)
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Cook Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until tender. Drain and set aside.
- Cook Chicken: While the noodles cook, heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Season the chicken strips with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for 6 to 8 minutes, turning occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Prepare Buttered Garlic Noodles: In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Cook for 1 to 2 minutes until the garlic is fragrant but not browned. Add the cooked noodles to the skillet and toss them well to coat with the butter and garlic mixture.
- Combine and Finish: Return the cooked chicken to the skillet with the noodles and gently mix to combine everything evenly. Sprinkle the grated Parmesan cheese and chopped fresh parsley over the top, then toss lightly before serving.
Notes
- Add a squeeze of lemon juice for brightness or a pinch of red pepper flakes for a little heat.
- You can substitute chicken with turkey or tofu for a different protein option.
- Leftovers store well in the fridge for up to 3 days.
