Instructions
- Prepare Pecan Clusters: Line a baking sheet with parchment paper. Arrange the pecan halves in small clusters of 3 to 4 nuts each, spacing them evenly apart to allow room for the caramel and chocolate layers.
- Melt Caramel: Place the caramel candies and heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the mixture is smooth and melted.
- Apply Caramel: Spoon approximately 1 teaspoon of the melted caramel onto the center of each pecan cluster. Let them set at room temperature for about 10 minutes to firm up.
- Melt Chocolate: In a separate bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in short bursts, stirring frequently until the chocolate is fully melted and smooth.
- Top with Chocolate: Spoon the melted chocolate over each pecan cluster, completely covering the caramel layer. Optionally, sprinkle flaky sea salt on top to enhance flavor.
- Set Clusters: Allow the clusters to sit at room temperature or chill them in the refrigerator until the chocolate is completely set and firm.
