Grilled Cheese Sandwich

  • 8 slices sandwich bread
  • 8 slices cheddar cheese

Instructions

  1. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in garlic, tomato paste, sugar, basil, salt, and pepper, and cook for 1–2 minutes until fragrant.
  2. Simmer the Soup: Pour in the crushed tomatoes and vegetable broth, stir well, and bring to a simmer. Cook uncovered for 15–20 minutes to meld the flavors.
  3. Blend the Soup: Remove from heat and use an immersion blender to blend the soup until smooth, or carefully blend in batches in a regular blender.
  4. Finish the Soup: Stir in heavy cream and butter. Return the pot to low heat and warm through, but do not boil to keep the cream from curdling.
  5. Prepare the Sandwiches: Spread mayonnaise or butter on the outsides of each bread slice. Layer cheddar cheese between two slices, ensuring the buttered sides face outwards.
  6. Cook the Sandwiches: Heat a skillet over medium heat. Cook each sandwich for 2–3 minutes per side until the bread is golden brown and the cheese has melted completely.
