Ingredients
Scale
Main Ingredients
- 1 cup farro, rinsed
- 2 1/2 cups almond milk (or milk of choice)
- 1/2 cup water
- 1/4 cup chopped dates
- 1/4 cup maple syrup or honey
- 1 tsp ground cardamom
- 1/2 tsp cinnamon
- Pinch of salt
Optional Garnishes
- 1/4 cup chopped almonds or pistachios
- 2 tbsp shredded coconut
Instructions
- Combine Ingredients: In a medium saucepan, combine the rinsed farro, almond milk, water, chopped dates, ground cardamom, cinnamon, and a pinch of salt. Stir well to mix all ingredients evenly.
- Simmer the Pudding: Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and simmer uncovered for 25 to 30 minutes. Stir occasionally to prevent sticking, until the farro is tender and the mixture thickens to a creamy pudding-like consistency.
- Add Sweetener: Stir in the maple syrup or honey, tasting and adjusting the sweetness to your preference for a balanced flavor.
- Rest and Thicken: Remove the saucepan from heat and let the pudding sit for 5 minutes. This resting time allows it to thicken further and enhance the flavors.
- Serve and Garnish: Serve the farro pudding warm, topped with your choice of chopped almonds or pistachios and shredded coconut. Optionally, add an extra drizzle of maple syrup for added sweetness.
Notes
- For a creamier texture, soak the farro in water overnight before cooking.
- Adjust the amount of maple syrup or honey based on desired sweetness and dietary preferences.
- Use any type of milk you prefer; coconut or oat milk work well for a dairy-free option.
- Garnishes are optional but add lovely texture and flavor contrast to the pudding.
- This pudding can be served warm or chilled as a breakfast or snack.
