- ½ cup crumbled feta cheese

- 1 small garlic clove, minced

Instructions
- Sauté the Garlic and Spinach: Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant. Add fresh spinach, season with salt and black pepper, and cook until wilted, about 2 minutes. Remove from heat and set the sautéed spinach aside.
- Prepare the Bread Slices: Butter one side of each bread slice evenly. On the unbuttered side of two bread slices, layer shredded mozzarella cheese first, followed by the sautéed spinach, then sprinkle crumbled feta cheese on top. Optionally add a pinch of red pepper flakes for extra flavor.
- Assemble the Sandwiches: Place the remaining two bread slices on top of the layered sides, making sure the buttered side is facing outward to ensure a crispy crust during cooking.
- Cook the Sandwiches: Heat a clean skillet or griddle over medium heat. Place one sandwich in the skillet and cook for 3-4 minutes on one side, pressing gently with a spatula to help the cheese melt and the bread crisp up. Flip carefully and cook the other side for another 3-4 minutes until golden brown and the cheese is fully melted.
- Serve: Remove sandwiches from the skillet, slice in half, and serve warm for the best gooey, crispy experience.
