Instructions
- Prepare the Filling: In a bowl, combine the softened cream cheese with powdered sugar and vanilla extract, if using, and mix until smooth and creamy.
- Assemble the Rolls: Lay one egg roll wrapper on a clean surface with one corner pointed towards you, forming a diamond shape. Spoon about 1 to 1½ tablespoons of the cream cheese mixture into the center of the wrapper.
- Fold Wrappers: Fold the bottom corner of the wrapper over the cream cheese filling, then fold in the two side corners toward the center. Roll the wrapper tightly toward the top corner to form a neat roll.
- Seal Rolls: Brush the top corner of the wrapper with the beaten egg to seal the edge securely. Repeat this process with the remaining wrappers and filling.
- Heat Oil: Pour vegetable oil into a deep skillet or pot to a depth of about 2–3 inches. Heat the oil to 350°F (175°C), using a thermometer to maintain the temperature accurately.
- Fry Rolls: Carefully add the cream cheese rolls to the hot oil in batches, frying them for 2–3 minutes each, turning occasionally, until they are golden brown and crispy on all sides.
- Drain: Remove the fried rolls with a slotted spoon and place them on paper towels to absorb excess oil.
