Description

Enjoy a fresh and vibrant twist on tacos with these Fruit Tacos, filled with a colorful mix of strawberries, pineapple, kiwi, and blueberries. Lightly sweetened and toasted tortillas create the perfect base for this refreshing dessert or snack, topped with creamy whipped cream or vanilla yogurt and a hint of mint.

Ingredients

Scale

Fruit Filling

  • 1 cup strawberries, diced
  • 1 cup pineapple, diced
  • 1 kiwi, peeled and chopped
  • 1/2 cup blueberries
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon lime juice
  • 1/2 teaspoon lime zest
  • 1/4 teaspoon cinnamon (optional)

Tortillas and Toppings

  • 6 small flour or corn tortillas
  • 2 tablespoons butter, melted
  • 1 tablespoon granulated sugar (for coating)
  • Whipped cream or vanilla yogurt (for serving)
  • Fresh mint leaves (optional for garnish)

Instructions

  1. Prepare the Fruit Mixture: In a medium bowl, combine the diced strawberries, pineapple, chopped kiwi, blueberries, honey or maple syrup, lime juice, lime zest, and cinnamon if using. Gently toss all the ingredients together to evenly coat the fruit and set aside to allow the flavors to meld.
  2. Toast the Tortillas: Brush both sides of each tortilla with the melted butter. Sprinkle a light coating of granulated sugar over each side. Heat a non-stick skillet over medium heat, then toast each tortilla for 1 to 2 minutes per side until they turn golden and slightly crispy. Remove from heat and let them cool slightly to hold their shape.
  3. Assemble the Fruit Tacos: Spoon the prepared fruit mixture evenly into each toasted tortilla shell. Top each taco with a dollop of whipped cream or vanilla yogurt. Garnish with fresh mint leaves if desired. Serve immediately for the best freshness and flavor.

Notes

  • Feel free to swap or add other seasonal fruits such as mango, peaches, or grapes for variety.
  • For a richer dessert, drizzle the tacos with chocolate or caramel sauce.
  • Add a crunchy texture by sprinkling granola or chopped nuts on top before serving.
