A hearty and flavorful Ground Beef Skillet featuring tender sweet potatoes, zucchini, and aromatic spices. This quick and easy one-pan dinner comes together in just 30 minutes, perfect for a nutritious weeknight meal that’s both filling and delicious.

Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 2 zucchinis, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • Optional: Red pepper flakes for extra heat

Instructions

  1. Brown the Ground Beef: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until it is browned and cooked through. Remove the beef from the skillet and set aside.
  2. Sauté Onions and Garlic: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, cooking for about 2-3 minutes until softened and fragrant.
  3. Cook Sweet Potatoes: Add the diced sweet potatoes to the skillet, stirring to coat them in the oil. Cook for 5-7 minutes until they begin to soften.
  4. Add Zucchini and Spices: Stir in the sliced zucchini along with paprika, cumin, chili powder, salt, and pepper. Continue cooking for another 5 minutes or until the zucchini is tender and the sweet potatoes are fully cooked.
  5. Combine Beef and Vegetables: Return the cooked ground beef to the skillet and stir everything together. Cook for an additional 2-3 minutes to heat through thoroughly.
  6. Garnish and Serve: Optional – sprinkle red pepper flakes for extra heat and garnish with freshly chopped parsley before serving.

Notes

  • For a spicier dish, add more chili powder or extra red pepper flakes.
  • You can substitute ground turkey or chicken for a leaner option.
  • To save time, peel and dice sweet potatoes in advance.
  • Serve with a side of steamed rice or crusty bread for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
