- Brown the Ground Beef: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until it is browned and cooked through. Remove the beef from the skillet and set aside.
- Sauté Onions and Garlic: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, cooking for about 2-3 minutes until softened and fragrant.
- Cook Sweet Potatoes: Add the diced sweet potatoes to the skillet, stirring to coat them in the oil. Cook for 5-7 minutes until they begin to soften.
- Add Zucchini and Spices: Stir in the sliced zucchini along with paprika, cumin, chili powder, salt, and pepper. Continue cooking for another 5 minutes or until the zucchini is tender and the sweet potatoes are fully cooked.
- Combine Beef and Vegetables: Return the cooked ground beef to the skillet and stir everything together. Cook for an additional 2-3 minutes to heat through thoroughly.
- Garnish and Serve: Optional – sprinkle red pepper flakes for extra heat and garnish with freshly chopped parsley before serving.
