- 1/3 cup honey or maple syrup
- 1 tsp vanilla extract
Instructions
- Combine Dry Ingredients: In a large bowl, mix together the rolled oats, ground flaxseed, mini chocolate chips, and shredded coconut if using. Stir well to ensure even distribution.
- Add Wet Ingredients: Add the natural peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt to the dry ingredients. Stir thoroughly until the mixture forms a thick, sticky dough.
- Adjust Consistency: If the mixture feels too dry, add a little more honey or maple syrup to moisten. If it’s too wet or sticky, add a few more oats to firm up the dough.
- Form Balls: Using your hands or a small cookie scoop, roll the mixture into bite-sized balls approximately 1 inch in diameter for easy snacking.
- Chill: Place the energy balls on a parchment-lined tray and refrigerate for at least 30 minutes to allow them to firm up and hold their shape.
- Store: Transfer the chilled energy balls into an airtight container. Store in the refrigerator for up to one week, or freeze for extended storage.
