Ingredients
Scale
Meringue
- 4 large egg whites (at room temperature)
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 2 tsp cornstarch
- Pinch of salt
Whipped Cream Topping
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Garnish
- Fresh berries (strawberries, raspberries, blueberries)
- Fresh mint leaves (optional)
Instructions
- Preheat the Oven: Preheat your oven to 300°F (150°C) to prepare for baking the meringue.
- Prepare the Meringue Base: In a clean, dry bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar one tablespoon at a time, continuing to beat until the mixture becomes glossy and stiff peaks form.
- Incorporate Additional Ingredients: Gently fold in the vanilla extract, white vinegar, and cornstarch using a spatula, ensuring the meringue remains airy while combining all ingredients evenly.
- Shape the Pavlova: On a baking sheet lined with parchment paper, shape the meringue into a heart shape. Make the edges slightly higher than the center to create a shallow well to hold the whipped cream later.
- Bake the Meringue: Place the meringue in the preheated oven and bake for 1 hour. After baking, turn off the oven and let the pavlova cool completely inside the oven with the door slightly ajar for at least 1 hour to prevent cracking.
- Prepare the Whipped Cream Topping: In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Assemble the Pavlova: Carefully transfer the cooled meringue to a serving platter. Spread the whipped cream evenly over the center well of the pavlova.
- Garnish and Serve: Arrange fresh berries over the whipped cream in an attractive pattern, and optionally garnish with fresh mint leaves. Serve immediately or refrigerate for up to 2 hours before serving.
Notes
- Ensure egg whites are at room temperature for better volume when whipping.
- Gradually adding sugar is key to forming a stable, glossy meringue.
- Allowing the pavlova to cool in the oven slowly helps minimize cracks.
- Use fresh, ripe berries for the best flavor and presentation.
- Serve the pavlova soon after assembling to keep the meringue crisp.
