- 1 cup freekeh (cracked or whole grain)
- 2 cups water or vegetable broth (for cooking freekeh)

- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh cilantro, chopped
Dressing & Extras
- 1/4 cup olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon apple cider vinegar (optional)
- Salt and pepper to taste
- 1/4 cup feta cheese (optional), crumbled
Instructions
- Cook the Freekeh: Rinse the freekeh under cold water until water runs clear. In a medium saucepan, combine freekeh and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until tender but chewy. Drain any excess liquid and let cool.
- Prepare Vegetables and Herbs: While freekeh cooks, halve the cherry tomatoes, dice the cucumber, finely chop the red onion, parsley, mint, and cilantro. Set aside.
- Make the Dressing: In a small bowl, whisk together olive oil, freshly squeezed lemon juice, apple cider vinegar if using, salt, and pepper until well combined.
- Combine Salad Ingredients: In a large bowl, mix the cooled freekeh with the chopped vegetables and herbs. Pour the dressing over the salad and toss gently to combine.
- Add Feta Cheese: If using, sprinkle crumbled feta cheese on top and give a light toss.
- Serve: Let the salad sit for 10 minutes to allow flavors to meld, then serve chilled or at room temperature.
Notes
- Use vegetable broth instead of water to add more flavor to the freekeh.
- Feta cheese is optional; omit for a dairy-free or vegan version.
- Freekeh can be found in Middle Eastern grocery stores or health food stores.
