Ingredients
Scale
Cheeses
- 1 (16-ounce) block Velveeta cheese, cubed
- 1 (8-ounce) package cream cheese
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
Other Ingredients
- 1 (10-ounce) can Rotel diced tomatoes with green chilies, undrained
- 1 packet ranch seasoning mix (about 1 ounce)
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Chopped fresh cilantro or green onions for garnish (optional)
- Tortilla chips for serving
Instructions
- Combine Ingredients: In a large saucepan or slow cooker set to low, add the cubed Velveeta, cream cheese, undrained Rotel tomatoes, sour cream, ranch seasoning mix, milk, garlic powder, and onion powder. Mix well to combine all the ingredients.
- Cook Until Smooth: Cook over low heat on the stovetop, stirring occasionally to prevent sticking, until all the cheeses are fully melted and the mixture becomes smooth and creamy, about 15–20 minutes. Alternatively, cook in a slow cooker on low for 1–2 hours, stirring occasionally.
- Add Cheddar Cheese: Stir in the shredded cheddar cheese and continue warming just until the cheddar melts thoroughly, making the queso rich and creamy.
- Adjust Consistency: If the dip is too thick, add a splash more milk and stir to reach your preferred consistency.
- Serve and Garnish: Serve the queso hot, garnished with chopped fresh cilantro or green onions if desired, alongside plenty of tortilla chips for dipping.
Notes
- This queso is versatile and works great as a topping for baked potatoes, nachos, or burgers.
- For extra heat, add chopped jalapeños or use spicy Rotel tomatoes.
- Store leftovers in the refrigerator and reheat gently on the stovetop or in the microwave, adding a bit of milk to loosen the consistency before serving.
