Description

This vibrant Jerk Chicken Bowl recipe combines tender, spicy jerk-seasoned chicken breast with hearty black beans, fresh avocado, and fluffy rice, topped with crisp corn, red onion, cilantro, and a zesty lime dressing. Perfect for a quick, flavorful meal that offers a delightful balance of spice, freshness, and comfort, making it great for lunch or dinner.

Ingredients

Scale

Protein

  • 1 lb chicken breast
  • 2 tbsp jerk seasoning

Grains and Legumes

  • 1 cup rice
  • 1 can black beans (about 15 oz)

Vegetables and Herbs

  • 1 avocado
  • 1/2 cup corn (fresh or frozen)
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro

Additional Ingredients

  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry and sprinkle them evenly with the jerk seasoning on both sides. Set aside to marinate briefly while preparing other ingredients, or refrigerate for up to 30 minutes for more intense flavor.
  2. Cook the Rice: Rinse the rice under cold water until the water runs clear. Cook according to package instructions, usually by boiling one part rice to two parts water until tender and fluffy. Set aside and keep warm.
  3. Cook the Chicken: Heat a skillet over medium-high heat and add a small amount of oil. Cook the seasoned chicken breasts for about 5-7 minutes per side or until fully cooked through and internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.
  4. Prepare the Beans and Corn: Drain and rinse the black beans. If using canned corn, drain it as well. Warm the beans and corn in a small pan over medium heat until heated through, seasoning lightly with salt and pepper if desired.
  5. Assemble the Bowl: In each serving bowl, place a generous scoop of rice as the base. Top with warm black beans and corn, sliced jerk chicken, diced avocado, red onion, and chopped cilantro.
  6. Add Lime Dressing: Drizzle fresh lime juice over the bowls for a bright, tangy finish. Add additional salt and pepper to taste.

Notes

  • For extra heat, add a chopped jalapeño or a drizzle of hot sauce when assembling the bowls.
  • Substitute chicken breast with thighs for juicier meat.
  • This bowl can be prepared ahead by storing components separately and assembling before serving.
