Description

Kentucky Pie is a rich and indulgent dessert featuring a flaky pie crust layered with melted chocolate and crunchy pecans, topped with a sweet, gooey filling made from corn syrup, sugar, butter, eggs, and vanilla. This classic Southern pie combines deep chocolate and nutty flavors with a smooth, custard-like texture, making it a perfect treat for any occasion.

Ingredients

Scale

Pie Crust

  • 1 pre-made pie crust (or homemade, if preferred)

Chocolate Layer

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans (or walnuts)

Filling

  • 1 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the pie.
  2. Prepare Pie Crust: Place the pie crust into a 9-inch pie dish, gently pressing it down to fit snugly against the edges.
  3. Melt Chocolate: In a small bowl, melt the semi-sweet chocolate chips in the microwave using 30-second intervals, stirring each time until smooth and fully melted.
  4. Chocolate Layer: Spread a thin, even layer of the melted chocolate over the bottom of the prepared pie crust.
  5. Add Nuts: Sprinkle the chopped pecans evenly over the melted chocolate to create a crunchy base layer.
  6. Mix Filling: In a separate mixing bowl, whisk together the light corn syrup, granulated sugar, melted butter, eggs, vanilla extract, and salt until fully combined and smooth.
  7. Pour Filling: Carefully pour the filling mixture over the nut and chocolate layer in the pie crust, spreading evenly.
  8. Bake: Bake the pie in the preheated oven for 50 to 60 minutes, or until the filling is set and the crust is golden brown. To test doneness, the filling should be slightly firm but still have a slight jiggle in the center.
  9. Cool: Allow the pie to cool completely on a wire rack before slicing to ensure the filling sets completely.

Notes

  • For a homemade touch, prepare your own pie crust or use a store-bought crust if short on time.
  • You can substitute walnuts for pecans based on preference or availability.
  • Be careful when melting chocolate in the microwave to prevent burning; stir frequently.
  • To test for doneness, insert a toothpick about an inch from the center; it should come out mostly clean with a few moist crumbs.
  • This pie is best served at room temperature or slightly chilled.
