Scale
Fudge Base
- 3 cups white chocolate chips
- 1 can (14 oz) sweetened condensed milk
- 2 tablespoons unsalted butter
Flavoring
- 2 teaspoons key lime zest
- ¼ cup key lime juice (fresh or bottled)
- ½ teaspoon vanilla extract
- Pinch of salt
- Optional: 1–2 drops green food coloring
- Extra lime zest for garnish
Instructions
- Prepare the Pan: Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal of the fudge later.
- Melt Ingredients: In a medium saucepan over low heat, combine white chocolate chips, sweetened condensed milk, and unsalted butter. Stir continuously until the chocolate is fully melted and the mixture becomes smooth.
- Add Flavorings: Remove the saucepan from heat. Quickly stir in the key lime juice, key lime zest, vanilla extract, pinch of salt, and green food coloring if using. Mix until everything is fully combined and evenly distributed.
- Pour and Garnish: Pour the fudge mixture into the prepared pan and smooth the top with a spatula. Sprinkle extra lime zest evenly over the surface for an attractive and flavorful garnish.
- Chill to Set: Place the pan in the refrigerator and chill for at least 3 to 4 hours, or until the fudge is firm and set.
- Serve: Once set, use the parchment overhang to lift the fudge from the pan. Cut into 36 small squares and serve chilled.
Notes
- Store leftover fudge in an airtight container in the refrigerator for up to one week.
- For a creative twist, add a graham cracker crust beneath the fudge to mimic the flavor of key lime pie.
- While bottled key lime juice works well, fresh key lime juice provides the best and most vibrant flavor.
