Description

Lasagna Roll Ups

  • 12 lasagna noodles
  • ½ lb Italian sausage
  • 1 (24-oz) jar spaghetti sauce
  • 1 (24-oz) container cottage cheese
  • 2 cups grated mozzarella cheese (divided)
  • ¼ cup grated parmesan cheese
  • 1 large egg
  • 1 Tbsp parsley


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350ºF (175ºC). Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking.
  2. Cook Noodles: Cook the lasagna noodles according to the package directions until al dente. Drain and set aside to cool slightly, so they are easy to handle.
  3. Prepare Meat Sauce: In a large skillet over medium-high heat, cook the Italian sausage until it is no longer pink. Drain any excess grease. Stir in the jar of spaghetti sauce and heat the mixture for about 5 minutes. Remove from heat and set aside.
  4. Mix Cheese Filling: In a large bowl, combine the cottage cheese, half of the grated mozzarella cheese, grated parmesan, large egg, and parsley. Mix well until all ingredients are thoroughly blended.
  5. Assemble Roll Ups: Spread one cup of the meat sauce evenly over the bottom of the prepared baking pan. Lay one lasagna noodle flat and spread approximately 2-3 tablespoons of the cheese mixture along the noodle, then roll it up carefully, placing the seam side down in the pan. Repeat this process with all noodles, arranging the roll ups side by side.
  6. Add Sauce and Cheese: Pour the remaining meat sauce over the rolled noodles evenly. Sprinkle the remaining mozzarella cheese over the top.
  7. Bake: Bake uncovered in the preheated oven for 25 minutes, or until the sauce is bubbly and cheese is melted. Let the dish rest for 5 minutes before serving to allow it to set.
