Description

This Last Minute Peach Cobbler is a quick and easy dessert perfect for busy days. With a buttery biscuit-like batter and sweet canned peaches baked to golden perfection, it’s a comforting treat that can be whipped up using pantry staples. Serve warm with vanilla ice cream or whipped cream for an irresistible finish.

Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Fruit

  • 1 can (15 oz) sliced peaches in juice, undrained
  • 1/2 teaspoon ground cinnamon (optional)

Optional for Serving

  • Vanilla ice cream or whipped cream

Instructions

  1. Preheat Oven. Set your oven to 350°F (175°C) to prepare for baking.
  2. Prepare Butter Base. Pour the melted butter into a 9×9-inch baking dish, ensuring it coats the bottom evenly.
  3. Mix Batter. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Gradually stir in the milk and vanilla extract until just combined without overmixing.
  4. Assemble Cobbler. Pour the batter evenly over the melted butter in the dish, but do not stir them together.
  5. Add Peaches. Spoon the canned peaches along with their juice evenly over the batter. Optionally, sprinkle cinnamon on top for added flavor.
  6. Bake. Place the dish in the preheated oven and bake for 40–45 minutes until the top is golden brown and batter is set.
  7. Cool & Serve. Let the cobbler cool slightly before serving. Enjoy warm, optionally topped with vanilla ice cream or whipped cream.

Notes

  • Substitute fresh or frozen peaches (about 2 cups sliced) for canned peaches. Add extra sugar if peaches are not sweetened.
  • This recipe works well with other fruits such as berries or apples.
