Ingredients
Scale
Cake
- 2 large eggs
- 1 cup sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 2 tsp vanilla extract
- ½ cup milk
- 1½ Tbsp butter
Frosting
- 4 Tbsp butter
- 10 Tbsp packed brown sugar
- ¼ cup heavy cream
- 1 tsp vanilla extract
- 1 cup shredded sweetened coconut
- ½ cup finely chopped pecans
Instructions
- Preheat and prepare pan: Preheat your oven to 350ºF (175ºC). Lightly grease an 8-inch square cake pan with cooking spray and dust with flour to prevent sticking.
- Make the batter: In a large bowl, use an electric hand mixer to beat the eggs on medium speed until frothy. Gradually add the sugar and beat on high speed until the mixture is thick and pale. Fold in the all-purpose flour, baking powder, and salt until just combined.
- Incorporate milk mixture: In a small saucepan, heat the milk, vanilla extract, and butter over medium heat until the butter melts completely. Slowly add this warm mixture to the batter while beating on medium speed until fully incorporated. Pour the batter into the prepared cake pan and smooth the top.
- Bake the cake: Place the pan in the preheated oven and bake for about 30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and allow the cake to cool on a wire rack.
- Prepare the frosting: While the cake cools, melt butter in a medium saucepan over medium heat. Stir in brown sugar, vanilla extract, heavy cream, shredded coconut, and chopped pecans. Mix until well combined and heated through.
- Top and broil: Spread the warm frosting evenly over the partially cooled cake. Place the cake under the oven broiler and broil for 2 to 3 minutes, until the topping is bubbly and golden. Watch carefully to avoid burning.
- Cool and serve: Remove the cake from the oven and let it cool completely on a wire rack before cutting into 9 servings and enjoying.
Notes

- Allow the cake to cool completely before slicing to ensure clean, neat pieces.
- This cake pairs beautifully with tea or coffee and is perfect for gatherings.
