Description

This delicious loaded breakfast hash combines crispy golden potatoes, savory sausage, and sautéed bell peppers and onions, topped with perfectly fried eggs and fresh parsley. A hearty and flavorful meal that’s perfect for starting your morning with a satisfying and colorful dish.

Ingredients

Scale

Vegetables

  • 3 medium russet potatoes, diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced

Protein & Dairy

  • 1/2 pound ground breakfast sausage
  • 4 large eggs

Other Ingredients

  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook undisturbed for 5 minutes to allow a crispy crust to form, then stir occasionally for another 10 minutes until the potatoes are golden and tender. Remove the potatoes and transfer them to a plate.
  2. Brown Sausage: In the same skillet, add the ground breakfast sausage and cook over medium-high heat until browned and cooked through, about 5 to 7 minutes. Remove the sausage from the skillet and set aside.
  3. Sauté Vegetables and Season: Add the remaining tablespoon of olive oil to the skillet. Sauté the sliced onion and bell peppers over medium heat until soft and slightly caramelized, about 6 to 8 minutes. Add the minced garlic, salt, black pepper, and smoked paprika, and cook for an additional minute to release the flavors.
  4. Combine Hash: Return the cooked potatoes and sausage to the skillet with the vegetables. Stir everything together to combine and cook for another 2 to 3 minutes to allow the flavors to meld.
  5. Fry Eggs: In a separate nonstick pan, fry the eggs to your preferred doneness. Sunny-side up or over-easy eggs work best to top the hash.
  6. Serve and Garnish: Place the fried eggs on top of the hash and garnish with the chopped fresh parsley. Serve immediately while hot for a comforting and hearty breakfast.

Notes

  • Russet potatoes are ideal for this recipe because they get crispy on the outside and tender inside.
  • You can substitute breakfast sausage with turkey sausage or a vegetarian alternative if preferred.
  • For extra flavor, consider adding a pinch of cayenne pepper or red chili flakes with the spices.
  • To make the dish gluten-free, verify that the sausage contains no gluten additives.
  • This hash can be reheated gently on the stovetop or in the microwave but is best served fresh.
