  • 1 cup all-purpose flour

  • 1 cup fresh or thawed frozen mango purée
  • 2 large eggs
  • 2/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest

For the Glaze

  • 1/2 cup powdered sugar
  • 1–2 teaspoons lime juice
  • 1/2 teaspoon lime zest


Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides to easily lift out the bars later. In a medium bowl, combine the flour, granulated sugar, and salt. Cut the cold, cubed butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the crust mixture evenly into the bottom of the prepared pan.
  2. Bake the Crust: Bake the crust in the preheated oven for 15–18 minutes, or until it turns lightly golden. This step ensures the base is firm and slightly crisp before adding the filling.
  3. Make the Filling: While the crust is baking, whisk together the mango purée, eggs, granulated sugar, flour, lime juice, and lime zest in a bowl until you achieve a smooth, uniform mixture.
  4. Bake with Filling: Remove the crust from the oven and pour the prepared mango filling evenly over the hot crust. Return the baking pan to the oven and bake for another 22–25 minutes, or until the filling is just set in the center but still slightly jiggly when you gently shake the pan.
  5. Cool the Bars: Allow the bars to cool completely in the pan to room temperature. This step is necessary to ensure they set properly and to facilitate clean glazing and slicing.
  6. Prepare the Lime Glaze: In a small bowl, whisk together the powdered sugar, 1 to 2 teaspoons of lime juice, and lime zest until smooth. Adjust the lime juice quantity to achieve a drizzleable consistency.
  7. Glaze and Serve: Drizzle the lime glaze evenly over the cooled bars. Once glazed, slice into 9 squares using the parchment overhang to lift them easily from the pan.
