Description

Instructions

  2. Heat the dairy mixture: In a saucepan over medium heat, combine the whole milk, heavy cream, sugar, and a pinch of salt. Stir continuously until the sugar is completely dissolved and the mixture is hot but does not reach boiling point to prevent curdling.
  3. Incorporate gelatin: Remove the saucepan from the heat and stir in the bloomed gelatin until it is fully dissolved and evenly dispersed within the warm mixture, ensuring the pudding will set properly.
  4. Puree the mango: Place the diced mango in a blender and blend until completely smooth. Add the vanilla extract and blend briefly just to combine the flavors evenly throughout the puree.
  5. Combine mixtures: Pour the mango puree into the warm milk mixture and whisk thoroughly until smooth and uniform in texture, making sure the gelatin mixture is fully integrated with the mango base.
  6. Chill the pudding: Divide the pudding mixture into individual serving cups or ramekins. Place them in the refrigerator and chill for at least 4 hours or until the pudding is fully set and firm to the touch.
