Description

Marry Me Chicken Pasta is a creamy, flavorful dish featuring tender chicken breasts cooked to golden perfection, smothered in a rich sun-dried tomato and Parmesan cream sauce, served over al dente pasta, and garnished with fresh basil and extra cheese for an irresistible meal that’s perfect for a cozy dinner.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter

Sauce

  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese, divided
  • 1/3 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes

Pasta

  • 12 oz pasta (fettuccine, penne, or spaghetti)

Garnish

  • Fresh basil leaves, chopped
  • Additional grated Parmesan cheese

Instructions

  1. Season and cook chicken: Season both sides of the chicken breasts with salt and pepper. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken from skillet and set aside.
  2. Prepare the sun-dried tomato sauce: In the same skillet, reduce heat to medium and deglaze the pan with chicken broth, scraping up browned bits. Stir in heavy cream, grated Parmesan, chopped sun-dried tomatoes, minced garlic, Italian seasoning, and red pepper flakes. Simmer gently for 5-7 minutes until the sauce thickens.
  3. Cook pasta: Meanwhile, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  4. Assemble the dish: Slice the cooked chicken breasts. Arrange the cooked pasta on plates, top with sliced chicken, and generously spoon the creamy sun-dried tomato sauce over the top.
  5. Garnish and serve: Sprinkle fresh chopped basil and additional grated Parmesan cheese over the dish before serving for added flavor and freshness.

Notes

  • Use chicken thighs instead of breasts for a juicier texture.
  • Substitute heavy cream with half-and-half for a lighter sauce.
  • Sun-dried tomatoes packed in oil add more flavor but drain before use to avoid excess oil in the sauce.
  • This dish pairs well with a side of garlic bread or Caesar salad.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
