Description

Mediterranean Baked Feta Eggs is a quick and flavorful breakfast or brunch dish featuring creamy baked feta cheese, fresh eggs, cherry tomatoes, and Kalamata olives, seasoned with oregano and olive oil. Baked to perfection, this dish combines rich Mediterranean flavors with a satisfying texture, garnished with fresh herbs and optionally spiced with red pepper flakes.

Ingredients

Scale

Main Ingredients

  • 1 block (about 8 oz) feta cheese, cubed
  • 4 large eggs
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced

Seasonings & Garnishes

  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano (or fresh if available)
  • Salt and black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)
  • Optional: A pinch of red pepper flakes for heat

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure even cooking for the baked feta and eggs.
  2. Prepare the Baking Dish: Drizzle olive oil in a 9×9-inch baking dish, then add the cubed feta cheese. Scatter the halved cherry tomatoes and sliced Kalamata olives evenly around the cheese.
  3. Season: Sprinkle dried oregano, salt, and black pepper over the feta, tomatoes, and olives. If desired, add a pinch of red pepper flakes to introduce some heat to the dish.
  4. Create the Wells: Use the back of a spoon to make four small wells in the mixture. Crack one egg carefully into each well, ensuring the yolks remain intact.
  5. Bake: Place the dish in the preheated oven and bake for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your liking—slightly runny yolks are ideal for this dish.
  6. Serve: Remove from the oven and garnish with freshly chopped parsley or basil. Serve warm, ideally with crusty bread or pita on the side to soak up the delicious sauce.

Notes

  • You can substitute fresh oregano for dried for a more vibrant flavor.
  • Adjust baking time based on your preferred egg doneness—less time for runny yolks, more for firm.
  • Add a sprinkle of smoked paprika or za’atar for extra Mediterranean flavor.
  • Serve with crusty bread, pita, or gluten-free alternatives to make it a complete meal.
  • This dish can be doubled easily using a larger baking dish for more servings.
