Ingredients
Scale
Meat and Vegetables
- 1 lb ground beef
- 3 medium zucchinis, diced
- 1 small onion, diced
- 2 cloves garlic, minced
Tomato and Sauce
- 1 can (14.5 oz) diced tomatoes, drained
- 1/2 cup salsa (mild or hot, depending on your preference)
Spices and Seasonings
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper, to taste
Other
- 1/2 cup shredded cheddar cheese (optional, for topping)
- Fresh cilantro or parsley, chopped (optional, for garnish)
- Olive oil for cooking
Instructions
- Cook the Ground Beef: In a large skillet, heat a small amount of olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it is fully browned and cooked through, about 6 to 8 minutes. Drain any excess fat and remove the beef from the skillet, setting it aside.
- Sauté the Vegetables: In the same skillet, add a bit more olive oil if needed. Add the diced onion and sauté for 2 to 3 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds to release its aroma.
- Cook the Zucchini: Add the diced zucchini to the skillet and continue cooking for 5 to 7 minutes, stirring occasionally. The zucchini should become tender and develop a slight golden color.
- Combine the Ingredients: Return the cooked ground beef to the skillet with the sautéed vegetables. Mix in the drained diced tomatoes, salsa, chili powder, cumin, paprika, salt, and pepper. Stir everything well to combine and allow the flavors to meld by cooking for another 3 to 4 minutes.
- Add Cheese (Optional): If using, sprinkle the shredded cheddar cheese evenly over the top of the skillet. Cover the pan and let it sit for a couple of minutes until the cheese has melted.
- Serve: Garnish with freshly chopped cilantro or parsley if desired. Serve warm on its own or paired with rice, tortillas, or avocado slices for a complete meal. Enjoy!
Notes
- For a spicier dish, use hot salsa and consider adding a pinch of cayenne pepper.
- To keep the dish low-carb, skip the tortilla side and serve with avocado or a fresh salad.
- Use lean ground beef (90% lean or higher) to reduce fat content.
- You can substitute ground turkey or chicken for a lighter protein option.
- Make sure to drain excess fat properly after cooking the beef to avoid greasiness.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
