  2. Mix Ingredients: In a large bowl, combine ground chicken, Parmesan cheese, all-purpose flour, eggs, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined to keep the texture tender—avoid over mixing to prevent toughness.
  3. Shape Meatloaves: Divide the mixture into 8 equal portions. Shape each portion into a small loaf shape and place them spaced a few inches apart on the prepared baking sheet.
  4. Initial Bake: Bake in the preheated oven for 25 minutes. This allows the chicken to cook through almost completely.
  5. Add Topping: Remove the baking sheet from the oven. Spread about a tablespoon of marinara sauce over the top of each mini meatloaf, then sprinkle approximately 2 tablespoons of freshly grated mozzarella cheese on each.
