Ingredients
Scale
Meatloaf Mixture
- 1 lb ground beef (85% lean)
- ½ cup breadcrumbs
- 1 egg
- ¼ cup milk
- ¼ cup finely chopped onion
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Mashed Potato Frosting
- 2 cups mashed potatoes (prepared)
- 2 tablespoons butter
- ¼ cup milk (for whipped potatoes)
Garnish
- Chopped fresh parsley (optional)
Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin to prevent sticking.
- Mix Meatloaf Ingredients: In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat.
- Fill Muffin Cups: Evenly divide the meat mixture among the muffin cups and gently press it down to form even mini meatloaf bases.
- Bake Meatloaf Muffins: Bake in the preheated oven for 20–25 minutes or until fully cooked and the internal temperature reaches 160°F (71°C).
- Prepare Mashed Potato Frosting: While the meatloaf bakes, warm the mashed potatoes with butter and milk over low heat until smooth and pipeable.
- Rest and Frost: Remove the muffin tin from the oven and allow the meatloaf muffins to rest for 5 minutes. Then, pipe or spoon the whipped mashed potatoes on top of each mini meatloaf, mimicking frosting.
- Garnish and Serve: Optionally, sprinkle chopped fresh parsley on top for a pop of color and freshness. Serve warm.
Notes
- Great for kids and can be made ahead and frozen for convenience.
- Substitute ground turkey or chicken for beef for a lighter option.
- Use dairy-free mashed potatoes to accommodate lactose intolerance.
