Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons sugar
Cheesecake Filling
- 16 oz (2 packages) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream, whipped
- 1/2 cup plain Greek yogurt or sour cream
Mango Swirl
- 1 1/2 cups mango puree (fresh or canned)
- 2 tablespoons sugar (optional, depending on sweetness of mango)
- 2 teaspoons unflavored gelatin (optional, for a firmer texture)
- 2 tablespoons hot water
Garnish
- Fresh mango slices or chunks
- Whipped cream
- Graham cracker crumbs (for sprinkling)
Instructions
- Prepare the crust: In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until the texture resembles wet sand.
- Form the crust: Press the crumb mixture firmly into the bottom of a springform pan or mini cheesecake molds. Chill in the fridge to set while preparing the filling.
- Make the cheesecake filling: Beat softened cream cheese, powdered sugar, and vanilla extract in a large bowl until smooth and creamy.
- Incorporate cream and yogurt: Gently fold in whipped heavy cream and Greek yogurt or sour cream until fully combined and smooth.
- Assemble cheesecake base: Pour the cheesecake filling over the chilled crust, smoothing out the top with a spatula.
- Prepare the mango puree: If the mango puree is thick, thin it slightly with water as needed. Optionally, dissolve gelatin in hot water and mix into mango puree for a firmer texture.
- Create mango swirl: Spoon or gently pour mango puree over the cheesecake filling layer.
- Make marbled effect: Use a toothpick or knife to swirl through both the cheesecake and mango layers, creating a marbled design.
- Chill to set: Refrigerate the cheesecake for at least 4-6 hours, or until fully set and firm.
- Garnish before serving: Top with whipped cream, fresh mango slices or chunks, and sprinkle graham cracker crumbs for added texture and presentation.
Notes
- For a firmer mango layer, gelatin is recommended but optional.
- Adjust sugar in mango puree based on the natural sweetness of your mangoes.
- Ensure cream cheese is softened for a smooth filling.
- Chilling time can be extended overnight for best results.
- Use a springform pan for easy removal and serving.
