Description

No Fail Jello Divinity is a delightful and easy-to-make candy that combines the fluffy texture of classic divinity with the fruity flavor of Jello. This recipe results in a glossy, chewy treat that melts in your mouth, perfect for holiday gifting or satisfying your sweet tooth.

Ingredients

Scale

Divinity Base

  • 2 cups sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 large egg whites, at room temperature
  • Pinch of salt

Flavoring & Add-ins

  • 1 (3 oz) package of flavored Jello (any color or flavor)
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional; pecans or walnuts recommended)

Instructions

  1. Prepare the Sugar Syrup: In a medium saucepan, combine sugar, light corn syrup, and water. Heat over medium heat, stirring occasionally until the sugar dissolves. Bring to a boil and cook until the mixture reaches 240°F (115°C) using a candy thermometer, about 5 minutes.
  2. Beat the Egg Whites: While the syrup is cooking, beat the egg whites with a pinch of salt in a stand or hand mixer until soft peaks form.
  3. Incorporate Syrup into Egg Whites: Carefully pour the hot syrup into the egg whites while the mixer runs on low speed. Gradually increase to medium-high speed and beat for 5–7 minutes until the mixture thickens and forms stiff peaks.
  4. Add Jello and Vanilla: Add the Jello powder and vanilla extract; continue beating until the mixture is fully incorporated, glossy, and fluffy.
  5. Fold in Nuts (Optional): Gently fold in chopped nuts if desired, ensuring even distribution without deflating the mix.
  6. Shape and Set: Drop spoonfuls of the mixture onto wax or parchment paper using a spoon or cookie scoop. Let them cool and firm for 4–6 hours or overnight.
  7. Store and Enjoy: Once set, enjoy your No Fail Jello Divinity. Store any leftovers in an airtight container for up to one week.

Notes

  • Use a candy thermometer for precise syrup temperature to achieve optimal texture.
  • Make sure egg whites are at room temperature for better volume.
  • Be cautious pouring hot syrup into egg whites to avoid cooking the eggs prematurely.
  • Chopped nuts add crunchy texture but are optional.
  • Store divinity in a cool, dry place to prevent stickiness.
