Fritters
- 2 large onions, thinly sliced
- 200g feta cheese, crumbled
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 large eggs
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying (about 2 cups)
Sweet Chilli Soy Dipping Sauce
- 1/3 cup sweet chilli sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon fresh lime juice
- 1 garlic clove, minced
- 1 teaspoon sesame oil
- 1 small fresh red chilli, finely chopped (optional)
Instructions
- Prepare the fritter batter: In a large mixing bowl, combine the thinly sliced onions, crumbled feta cheese, all-purpose flour, baking powder, chopped parsley, salt, and black pepper.
- Add eggs and mix: Crack the eggs into the bowl and mix thoroughly until a thick batter forms. If the mixture is too stiff, add a little water to loosen it slightly, ensuring it holds together but isn’t runny.
- Heat the oil: Pour vegetable oil into a deep frying pan or pot to a depth of about 1 inch. Heat over medium-high heat until it reaches approximately 350°F (175°C), the ideal frying temperature.
- Fry the fritters: Using a heaped spoon, carefully drop spoonfuls of the batter into the hot oil. Fry in batches to avoid crowding, turning the fritters occasionally so they cook evenly on both sides, about 3–4 minutes per side, until golden brown and crisp.
- Drain excess oil: Remove the fritters with a slotted spoon and place them on paper towels to drain any excess oil, keeping them crisp and light.
- Prepare the dipping sauce: In a small bowl, whisk together the sweet chilli sauce, soy sauce, rice vinegar, fresh lime juice, minced garlic, sesame oil, and finely chopped red chilli if using, to create a balanced sweet, tangy, and spicy dipping sauce.
- Adjust the dipping sauce flavors: Taste the sauce and adjust as needed – add more lime juice for extra tang or more sweet chilli sauce for added sweetness, tailoring it to your preference.
- Serve: Arrange the warm crispy fritters on a serving platter and serve immediately alongside the dipping sauce for a delightful appetizer or snack experience.
