Instructions
- Preheat and prepare pan: Preheat your oven to 375°F (190°C). Grease a mini muffin tin thoroughly using cooking spray or melted butter to prevent sticking.
- Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
- Combine wet ingredients: In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth and fully incorporated.
- Mix batter: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing to keep the batter light and fluffy.
- Fill muffin tin: Spoon roughly 1 tablespoon of the pancake batter into each mini muffin cup, filling about two-thirds full. Press one piece of the cut sausage into the center of each cup, embedding it slightly into the batter.
