Description

These Pancake Sausage Bites are a delicious and convenient breakfast treat combining fluffy pancake batter with savory sausage pieces. Perfectly portioned for a quick snack or meal prep, they bake to golden perfection and pair wonderfully with maple syrup for dipping.

Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • ¾ cup buttermilk
  • 1 large egg
  • 1 tablespoon melted butter
  • ½ teaspoon vanilla extract

Other Ingredients

  • 12 fully cooked breakfast sausage links, cut into thirds
  • Cooking spray or additional melted butter for greasing
  • Maple syrup for dipping (optional)

Instructions

  1. Preheat and prepare pan: Preheat your oven to 375°F (190°C). Grease a mini muffin tin thoroughly using cooking spray or melted butter to prevent sticking.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
  3. Combine wet ingredients: In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth and fully incorporated.
  4. Mix batter: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing to keep the batter light and fluffy.
  5. Fill muffin tin: Spoon roughly 1 tablespoon of the pancake batter into each mini muffin cup, filling about two-thirds full. Press one piece of the cut sausage into the center of each cup, embedding it slightly into the batter.
  6. Bake: Place the muffin tin in the preheated oven and bake for 12 to 15 minutes, or until the bites are golden brown and a toothpick inserted into the batter portion comes out clean.
  7. Cool and serve: Allow the pancake sausage bites to cool slightly in the tin before carefully removing them. Serve warm with maple syrup on the side for dipping, if desired.

Notes

  • Use maple-flavored sausage links for an added touch of sweetness.
  • These bites freeze well; simply reheat in the microwave or oven for a quick and convenient breakfast.
