Description

This Parmesan Crusted Cod recipe features tender cod filets topped with a flavorful, crispy crust made from Parmesan cheese, panko breadcrumbs, garlic, parsley, and a hint of lemon zest. Baked to golden perfection in just 25 minutes, it’s an easy and elegant seafood dish perfect for a quick weeknight dinner or special occasion.

Ingredients

Scale

Crust Ingredients

  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 garlic cloves, finely minced
  • 2 tablespoons finely chopped fresh parsley
  • 3/4 teaspoon lemon zest
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons salted butter, melted

Fish and Garnishes

  • 4 (5-ounce) cod filets
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. Prepare the Oven and Baking Dish: Preheat your oven to 425°F (220°C). Lightly spray a large baking dish with nonstick cooking spray to prevent the cod from sticking during baking.
  2. Mix the Crust Ingredients: In a medium bowl, combine the grated Parmesan cheese, panko breadcrumbs, finely minced garlic, chopped fresh parsley, lemon zest, salt, black pepper, and paprika. Add the melted butter and mix well until the crumbs are evenly coated and slightly moist.
  3. Prepare the Cod: Pat the cod filets dry with paper towels to ensure the crust adheres well. Arrange the fish filets in a single layer in the prepared baking dish.
  4. Top with Crust: Evenly sprinkle about 1/4 cup of the breadcrumb mixture over each cod filet. Press the crust gently so it sticks to the fish. It is okay if some crumbs fall to the bottom of the dish.
  5. Bake: Place the baking dish in the preheated oven and bake the cod for 15–20 minutes, depending on filet thickness. The crust should turn a golden brown, and the fish should flake easily when tested with a fork.
  6. Serve: Plate the baked cod immediately. Garnish with extra fresh parsley and lemon wedges for added brightness and flavor. Enjoy warm.

Notes

  • Ensure the cod filets are patted dry before applying the crust to help it stick properly.
  • Baking time may vary slightly depending on the thickness of your fish.
  • For a dairy-free option, substitute the butter with olive oil and the Parmesan with a vegan alternative.
  • Leftovers can be refrigerated and gently reheated in the oven to maintain crispness.
  • Serve with a side of steamed vegetables or a light salad for a balanced meal.
