Pie Crust
- 1 refrigerated pie crust (or homemade)
Filling
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1/3 cup corn syrup
- 1 egg, beaten
- 1 tbsp melted butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat and prepare pan: Preheat the oven to 350°F (175°C) and grease a mini muffin pan thoroughly to prevent sticking.
- Form crusts: Roll out the pie crust on a floured surface and use a cookie cutter to cut small circles. Press each circle gently into the mini muffin pan cups to create little pie shells.
- Mix filling: In a medium bowl, combine the chopped pecans, brown sugar, corn syrup, beaten egg, melted butter, vanilla extract, and a pinch of salt until well blended.
- Fill crusts: Spoon the pecan mixture evenly into each prepared pie crust, filling nearly to the top.
- Bake: Place the muffin pan in the preheated oven and bake for 20-25 minutes or until the filling is set and the tops are golden brown.
- Cool and serve: Allow the pecan pie bites to cool completely in the pan before carefully removing them. Serve at room temperature.
Notes
- Using refrigerated pie crust speeds up preparation, but homemade crust can be used for a fresher flavor.
- Be sure to grease the mini muffin pan well to help with easy removal of bites.
- Allow the bites to cool to set the filling properly, preventing messy slices.
- For extra flavor, consider adding a pinch of cinnamon or nutmeg to the filling mixture.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
