Description

These Pecan Pie Bites are a delightful mini dessert that’s perfect for any occasion. Featuring a buttery pie crust filled with a rich, sweet pecan filling, these bite-sized treats combine the classic flavors of pecan pie in an easy-to-make, portable form. Perfect for parties, holiday gatherings, or a simple indulgence.

Ingredients

Scale

Pie Crust

  • 1 refrigerated pie crust (or homemade)

Filling

  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/3 cup corn syrup
  • 1 egg, beaten
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat and prepare pan: Preheat the oven to 350°F (175°C) and grease a mini muffin pan thoroughly to prevent sticking.
  2. Form crusts: Roll out the pie crust on a floured surface and use a cookie cutter to cut small circles. Press each circle gently into the mini muffin pan cups to create little pie shells.
  3. Mix filling: In a medium bowl, combine the chopped pecans, brown sugar, corn syrup, beaten egg, melted butter, vanilla extract, and a pinch of salt until well blended.
  4. Fill crusts: Spoon the pecan mixture evenly into each prepared pie crust, filling nearly to the top.
  5. Bake: Place the muffin pan in the preheated oven and bake for 20-25 minutes or until the filling is set and the tops are golden brown.
  6. Cool and serve: Allow the pecan pie bites to cool completely in the pan before carefully removing them. Serve at room temperature.

Notes

  • Using refrigerated pie crust speeds up preparation, but homemade crust can be used for a fresher flavor.
  • Be sure to grease the mini muffin pan well to help with easy removal of bites.
  • Allow the bites to cool to set the filling properly, preventing messy slices.
  • For extra flavor, consider adding a pinch of cinnamon or nutmeg to the filling mixture.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
