Ingredients
Scale
Chocolate Mixture
- 1/2 cup unsalted butter
- 4 ounces semi-sweet chocolate, chopped or chips
Batter
- 2 large eggs
- 2 large egg yolks
- 1/3 cup granulated sugar
- 1/4 teaspoon salt
- 2 tablespoons all-purpose flour
- 1/4 teaspoon vanilla extract
Filling and Topping
- 6–8 fresh raspberries
- Powdered sugar for dusting (optional)
Instructions
- Preheat and Prepare: Preheat the oven to 425°F. Lightly grease or line a muffin tin with 6 cups to prepare for the batter.
- Melt Chocolate and Butter: In a heatproof bowl, melt the butter and semi-sweet chocolate together over a double boiler or microwave in 30-second intervals, stirring until smooth and combined.
- Mix Eggs and Sugar: In a separate bowl, whisk the eggs, egg yolks, granulated sugar, and salt until thick and pale, about 1–2 minutes, to create a fluffy base.
- Combine Mixtures: Slowly pour the melted chocolate mixture into the egg mixture while whisking constantly to prevent curdling or scrambling of the eggs.
- Add Flour and Vanilla: Gently stir in the all-purpose flour and vanilla extract until just combined, ensuring not to overmix.
- Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. Press one fresh raspberry into the center of each cup.
- Bake: Bake in the preheated oven for 10–12 minutes until the edges are set but the centers remain soft and molten.
- Cool and Serve: Let the cupcakes cool in the pan for 1–2 minutes, then carefully remove them. Serve warm and dust with powdered sugar if desired for an elegant finish.

- These cupcakes are rich; smaller servings are recommended.
