Instructions

  1. Heat aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté for 3–4 minutes until fragrant and soft.

  3. Add remaining vegetables: Add the diced zucchini, yellow squash, and both bell peppers. Cook for another 5–7 minutes, stirring occasionally until the vegetables begin to soften.
  4. Add tomato paste: Stir in the tomato paste to coat the vegetables evenly; this enriches the flavor base of the soup.
  5. Add tomatoes and broth: Pour in the diced tomatoes with their juices and the vegetable broth. Stir well to combine.
  6. Season the soup: Add the dried thyme, dried oregano, crushed red pepper flakes (if using), and season with salt and black pepper to taste.
  7. Simmer: Bring the soup to a boil, then reduce the heat and let it simmer gently for 20–25 minutes, or until all vegetables are tender and flavors meld together.
