Description

Rocky Road Delight is a no-bake, rich and creamy chocolate treat combining semisweet and milk chocolate chips with crunchy nuts and fluffy mini marshmallows. This easy-to-make dessert is perfect for satisfying your sweet tooth and can be prepared quickly with no oven required. Chilled until firm, each bite offers a delightful contrast of textures and flavors.

Ingredients

Scale

Chocolate Mixture

  • 1 cup semisweet chocolate chips
  • 1 cup milk chocolate chips
  • 1/4 cup sweetened condensed milk
  • 1 teaspoon vanilla extract

Add-ins

  • 1/2 cup chopped walnuts
  • 1/2 cup chopped almonds
  • 2 cups mini marshmallows

Instructions

  1. Combine Ingredients: In a microwave-safe bowl, add the semisweet chocolate chips, milk chocolate chips, and sweetened condensed milk together.
  2. Microwave Melting: Heat the mixture in 30-second intervals in the microwave, stirring after each interval until the chocolate is completely melted and smooth.
  3. Add Flavor and Mix-ins: Stir in the vanilla extract, then fold in the chopped walnuts, chopped almonds, and mini marshmallows until everything is evenly incorporated.
  4. Prepare Pan: Grease a 9×9-inch baking dish lightly to prevent sticking, then spread the chocolate mixture evenly in the dish.
  5. Chill to Set: Place the dish in the refrigerator and chill for 2 hours or until the mixture is firm enough to cut.
  6. Serve: Once firm, cut into squares and serve immediately or store chilled.

Notes

  • Use good quality chocolate chips for richer flavor.
  • Chopped nuts can be substituted with pecans or hazelnuts as preferred.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • For a nut-free version, omit the nuts and add additional marshmallows or dried fruit.
  • Please ensure the marshmallows and nuts are fresh for the best texture.
