Description

A quick and easy Rotel Dip recipe combining seasoned ground beef, spicy diced tomatoes, and creamy melted Velveeta cheese. Perfect for parties or casual snacking, this cheesy, savory dip is served warm with tortilla chips or toasted bread.

Meat and Seasoning

  • 1 lb ground beef (lean, medium, or extra lean)
  • 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)

Other Ingredients

  • 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
  • 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)

Garnishes (Optional)

  • Diced tomatoes
  • Freshly chopped parsley or cilantro
  • Chopped green onions


Instructions

  1. Cook the Ground Beef: Heat a large skillet or frying pan to medium heat. Add the ground beef and break it apart using a wooden spoon. Cook until there is no pink remaining and the meat is cooked through, approximately 5 minutes. Drain any excess fat from the pan.
  2. Add Seasoning and Rotel: Reduce heat to medium. Stir in the taco seasoning and the can of Rotel with juices. Cook for 2-3 minutes, stirring occasionally until the mixture is well combined and the sauce begins to simmer. Optionally, reserve 1 tablespoon of the diced tomatoes from Rotel to use as garnish later.
  3. Melt the Velveeta Cheese: Add the cubed Velveeta cheese to the skillet. Continuously stir the mixture until the cheese melts completely and the dip becomes smooth and creamy.
  4. Garnish and Serve: Optionally, garnish with reserved diced tomatoes, freshly chopped parsley or cilantro, and sliced green onions. Serve the dip immediately with tortilla chips, crostini, or toasted baguettes for dipping and enjoy!
