Ingredients
Scale
Sweet Potato Mixture
- 3 cups mashed sweet potatoes (about 3–4 large sweet potatoes, baked and peeled)
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs (lightly beaten)
- 1/2 cup unsalted butter (melted)
Pecan Topping
- 1/3 cup all-purpose flour
- 1 cup light brown sugar (packed)
- 1 cup chopped pecans
- 1/3 cup unsalted butter (softened)
Instructions
- Preheat Oven and Prepare Dish: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking and ensure easy serving.
- Mix Sweet Potato Base: In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, salt, vanilla extract, lightly beaten eggs, and melted butter. Stir everything together until the mixture is smooth and well incorporated.
- Assemble Sweet Potato Layer: Pour the sweet potato mixture into the prepared baking dish, spreading it evenly to create a flat surface that will hold the topping nicely.
- Prepare Pecan Topping: In a separate bowl, mix the light brown sugar, all-purpose flour, chopped pecans, and softened butter. Use your fingers or a fork to combine until the mixture becomes crumbly and clumps form.
- Add Topping and Bake: Sprinkle the prepared pecan topping evenly over the sweet potato layer. Place the casserole in the preheated oven and bake uncovered for 30 to 35 minutes, until the topping turns golden brown and the casserole is heated through.
- Cool and Serve: Remove from the oven and let the casserole cool slightly before serving to allow it to set and make serving easier.
Notes
- You can prepare this dish a day in advance and refrigerate it; bake it just before serving for freshness.
- For a lighter version, reduce the sugar slightly or substitute half the butter with applesauce to cut calories and fat.
