Description

Delight in these soft and flavorful Sourdough Discard Cinnamon Sugar Knots, a perfect way to use sourdough discard. Coated in a sweet cinnamon-sugar blend and baked to golden perfection, these knots are an irresistible treat for breakfast or any time of the day.

Ingredients

Scale

Dough Ingredients

  • 1 1/2 cups sourdough discard (unfed)
  • 1/4 cup sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon

Cinnamon-Sugar Coating

  • 1/2 cup sugar (for cinnamon-sugar coating)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Make the dough: In a large mixing bowl, combine sourdough discard, sugar, all-purpose flour, baking soda, and salt. Stir until a soft dough forms, ensuring everything is well incorporated.
  3. Roll it out: Lightly flour a clean surface and roll the dough out into a rectangle about 1/4-inch thick, providing the right thickness to form delicate knots.
  4. Brush with butter & cinnamon sugar: Using a pastry brush, spread melted unsalted butter evenly over the dough. In a separate small bowl, mix 1/2 cup sugar with 1 teaspoon ground cinnamon, then sprinkle half of this cinnamon-sugar mixture evenly over the buttered dough.
  5. Shape into knots: Cut the dough into 1-inch-wide strips. Take each strip, twist it gently, and tie it into a loose knot. Arrange the knots on the prepared baking sheet, leaving space between them for expansion.
  6. Bake: Place the baking sheet in the preheated oven and bake the knots for 12 to 15 minutes, or until they turn a lovely golden brown color.
  7. Final coat: While the knots are still warm, toss them in the remaining cinnamon-sugar mixture, coating them evenly for added sweetness and crunch.
  8. Serve: Serve the cinnamon sugar knots warm and enjoy their soft, sweet, and fragrant flavors fresh from the oven.

Notes

  • Use unfed sourdough discard for best texture and mild flavor.
  • If you prefer, you can add a pinch of nutmeg or cloves to the cinnamon sugar for extra spice.
  • The knots are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • Reheat gently in the oven or microwave before serving to regain softness.
  • You can substitute all-purpose flour with a gluten-free blend to make it gluten free.
