  • 1 tablespoon oil
  • 1 onion, diced
  • 2 cloves garlic, minced

  • 1–2 teaspoons chili powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground ginger
  • 600 grams carrots, sliced
  • 150 grams red lentils
  • 1.5 liters vegetable stock
  • 1 handful fresh coriander, chopped


Instructions

  1. Prepare aromatics: Heat the oil in a pot over medium heat. Add the diced onion and sauté for 5-7 minutes until it becomes soft and translucent.
  2. Add garlic and spices: Stir in the minced garlic and sauté for an additional minute. Then add ground coriander, cumin, chili powder, turmeric, and ground ginger. Cook the spices for about 1 minute until fragrant to enhance their flavors.
  3. Add main ingredients: Pour in the sliced carrots, red lentils, and vegetable stock into the pot. Stir everything together evenly.
  4. Simmer the soup: Bring the mixture to a simmer and cook gently for 25 minutes, or until the carrots and lentils are tender and fully cooked.
  5. Blend the soup: Once cooked, use a hand blender directly in the pot to purée the soup until smooth. Alternatively, transfer the soup in batches to a stand-alone blender and blend thoroughly.
  6. Finish with coriander and seasoning: Stir in the chopped fresh coriander. Taste the soup and adjust seasoning with salt and pepper according to your preference.
  7. Serve: Ladle the hot soup into bowls and garnish as desired, then serve immediately for a warming, flavorful meal.
