Strawberry Syrup
- 1 cup fresh strawberries, hulled and chopped

- 1/2 cup plain Greek yogurt
- 1/2 cup milk
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare Strawberry Syrup: In a small saucepan over medium heat, combine the chopped strawberries and granulated sugar. Cook for 5–7 minutes, stirring occasionally, until the strawberries break down and the mixture becomes syrupy. Remove from heat and allow it to cool completely to room temperature.
- Blend Cheesecake Mixture: In a blender, add the softened cream cheese, plain Greek yogurt, milk, honey or maple syrup, vanilla extract, and a pinch of salt. Blend on high speed until the mixture is smooth and creamy, ensuring no lumps remain.
- Layer and Swirl: Spoon a portion of the cheesecake mixture into the ice pop molds, then add a spoonful of the cooled strawberry syrup on top. Continue layering the cheesecake mixture and strawberry syrup until the molds are filled. To create the swirl effect, gently insert a skewer or knife and twist lightly to combine the layers without fully mixing.
- Freeze: Insert the ice pop sticks into each mold and place them in the freezer. Freeze for at least 6 hours, or until the ice pops are completely set and firm.
- Serve: To unmold, run warm water briefly over the outside of the molds to loosen the pops. Enjoy immediately as a cool, creamy dessert on a warm day.
